Cheesy-goodness, Shepherd’s Pie

I feel an affinity for the pioneer women of yesteryear.  Life prohibited communication from being lengthy, detailed, or effusive.  And yet, they found a way to distill love and support into a single focus, a heartfelt gift:  a casserole!
In the spirit of the pioneer’s, I have perfected cheesy-goodness.  Simple, filling, and oozing love, I present it whenever I see the need and hope that my message is received:  I care for you.

SHEPHERD’S PIE
1 ½ pounds lean ground beef (or mixture ground turkey & ground beef)
1 can (10.75 oz) condensed tomato soup
1 TBSP Worchestershire sauce
1 tsp dried thyme
½ tsp pepper
½ tsp salt
2 cups grated cheese (cheddar or mixed)
2 cups frozen mixed vegetables (or frozen vegetables of choice)
3-4 cups mashed potatoes

1.  Brown hamburger and drain.  Add tomato soup, Worchestershire sauce, and spices and cook for 5 minutes until well blended.  Press into bottom of ungreased 9×9 pan.

2. Cover meat mixture with grated cheese.

3. Microwave vegetables until heated.  DRAIN. Layer on meat mixture.

4. Prepare mashed potatoes. Spread on top of vegetables.

5. Bake at 350 degrees F for approximately 35 minutes or until heated throughout.

 
The casserole can be prepared ahead of time, refrigerated, and heated later for approx 45 minutes.  It can also be frozen, thawed, and heated.
